GLAZED CARROTS

A sweet orange glaze with a hint of ginger makes these carrots delicious. A perfect compliment with Chicken a la king.

Ingredients

  • 2 lbs medium carrots, sliced crinkle cut 1/2 inch thick
  • water
  • 1/2 tsp salt
  • 1/2 tsp granulated sugar
  • 1 tbsp hard margarine (or butter)
  • 1 tbsp all-purpose flour
  • 2-1/2 tbsp brown sugar, packed
  • 2 tbsp chopped candied ginger
  • 2/3 cup prepared orange juice
  • salt, sprinkle

Preparation

Step 1

Cook carrot in water, salt and granulated sugar in large saucepan on medium-high for 10 to 12 minutes until tender-crisp. Drain. Return to saucepan. Cover to keep warm.

Melt margarine in small saucepan on medium. Mix in flour, brown sugar and ginger. Stir in orange juice. Heat and stir for 3 minutes until boiling and thickened. Add salt. Pour over carrots. Stir gently.
