Basic Sweet Yeast Dough

Ingredients
- 2 packages active dry yeast
- 1/2 C warm water
- 1 1/2 C warm milk
- 1/4 C melted butter
- 1/2 C brown sugar
- 1 1/2 tsp salt
- 1 egg, beaten
- 3 C whole wheat flour
- 2 - 3 C unbleached all-purpose flour

Step 1
Combine the yeast and the warm water in a small bowl, mix and set aside. In a large mixing bowl combine the milk, butter, brown sugar, salt and egg and blend well. Add teh yeast mixture and beat in the whole wheat flour. Beat 2 minutes with a wooden spoon. Cover and let rise until bubble. Stir and add the white floursufficient to make a soft dough that comes off the sides of the bowl.
Turn out on a floured board and knead for 10 minutes until shiny and smooth. Place into an oiled bowl and let rise for about 1 hour. Punch down dough and knead a little, let it rest, covered for 10 minutes. The dough is now ready to be made into any type of rolls and breads.
