Twice Baked Cauli-Tots

This recipe was delicious! The only downfall was that it was a bit timely and only makes about 16 tots! These have all the flavor of twice-baked potatoes but have the fun format of easy-to-eat tots.

- 1 head cauliflower
- 8 pieces bacon
- 3 green onions
- 1 clove of garlic

Preparation
Step 1
1. Preheat Oven to 400 degrees. Boil cauliflower for 10 minutes.Cook bacon in a frying pan and pat dry with a paper towel.
2. In a food processor, blend together the cooked, drained cauliflower and remaining ingredients. With a cookie scoop or large spoon, scoop the mixture onto a foil-lined baking sheet. You can place them close together because they don’t melt down like cookies. Bake for 20 minutes, flip, and bake another 20 minutes
