Breads: Helen Wells' Sour Dough Bread

Ingredients
- 1 cup warm water
- 1 package yeast
- 2 t salt
- 2 T sugar
- 1 T oil
- 1/2 cup soya granules - optional
- 1 1/2 cup sour dough culture
- 4 cups flour

Preparation
Step 1
Rinse mixing bowl with hot water.
Add warm water and yeast.
Add rest of ingredients ending with sour dough culture.
Add flour 1 cup at a time. Mix with a wooden spoon.
Cover, let stand in one place 1 hour.
Knead on well-floured board at least 10 minutes.
Divide and shape into 2 greased loaf pans.
Brush with cooking oil.
Cover and set in warm place for 40 minutes (2-3 hours for difference in taste)
Preheat oven to 400 degrees and bake 30-25 minutes.
Rub with butter.
Stir culture before you remove the amount necessary for making bread
Let this come to working temperature by placing it, lightly covered, in a bowl of hot water for 1 hour
Add equal parts of all-purpose flour and warm water to the remaining culture
Mix, cover lightly and put in warm place for 5 hours or until it bubbles
Stir often (once a week) or it will die
