AUNT MINNIE'S CRACKER PUDDING

This fabulous and tastey recipe comes from - Brenda Grubb. It is the recipe of her husband's Aunt Minnie. The Grubbs had us out for dinner one Easter and served this.

Ingredients
- 1 quart of milk
- 1 egg
- 1/2 cup coconut
- 1 cup crushed Saltine crackers (about 23)
- 4 TBS sugar
- 1 tsp. vanilla
- Coconut for garnish
- food coloring for fun

Preparation
Step 1
Heat milk. Add egg and crackers. Stir (while on heat) constantly until mixture thickens. Add sugar and vanilla. Cook until it boils and thickens a little more. Remove from heat and add coconut. Add a little red food coloring to make it pink, just for fun.
Cool and refrigerate.
