  • 1 1/2 Grated (Peeled Carrots)
  • 1/2 cup Rasins
  • 1/2 cup Pineapple and Juice
  • For the Maple Cream Cheese Frosting:
  • 2 8-ounce Packages Cream Cheese (softened)
  • 1 Stick Unsalted Butter
  • 2 cups Confectioners Sugar
  • 1/4 cup Pure Maple Syrup

instructions For the Maple Cream Cheese Frosting: While the cake cools beat all the frosting ingredients in a stand mixer on medium until fluffy. Chill the frosting for 10-20 minutes until it has set to spread smoothly.
