CHOCOLATE ALMOND TORTE

- 2 cups whole blanched almonds
- 6-1/2 ounces unsweetened chocolate
- 7 egg yolks
- 1 cup sugar
- 1 stick plus 5 tablespoons unsalted butter at room temperature
- 1/4 cup confectioners sugar for dusting

Step 1
Preheat oven to 350 degrees. Butter bottom of an 8” springform pan and line with parchment paper. Lightly butter and flour paper and the sides of the pan. In food processor grind the almonds and chocolate to a medium fine consistency. In medium bowl beat egg yolks and sugar until light and fluffy. Add butter and beat until smooth. Add almond-chocolate mixture and beat until well blended 2-3 minutes. Batter will be very dense, scrap it into the prepared pan. Bake cake in lower third of oven for 45 minutes or until a skewer inserted in center comes out clean. Let cake cool in pan for 5 minutes. Remove from pan and place on serving plate. Let cool completely. Just before serving sift confectioners sugar over top.
