Ingredients

  • 3 Tbsp olive oil, plus more for drizzling
  • 1 clove garlic, pressed
  • 24 small bocconcini
  • 6 slices prosciutto, cut in half lengthwise and crosswise
  • 1/2 loaf crusty Italian bread, cut into 1 inch cubes
  • 24 grape or cherry tomatoes
  • 24 bamboo skewers, soaked at least 1 hour
  • 8 basil leaves, shredded, for garnish

Preparation

Step 1

Combine oil and garlic. Wrap each bocconcini with a piece of prosciutto. Thread a wrapped bocconcini, a gread cube and a tomato onto each skewer. Brush bread cubes with garlic oil. Grill over medium-low flame, 2 to 3 minutes per side, until cheese begins to melt. Drizzle with olive oil and garnish with basil. Makes 6 servings.
