Ingredients
- 3 Tbsp olive oil, plus more for drizzling
- 1 clove garlic, pressed
- 24 small bocconcini
- 6 slices prosciutto, cut in half lengthwise and crosswise
- 1/2 loaf crusty Italian bread, cut into 1 inch cubes
- 24 grape or cherry tomatoes
- 24 bamboo skewers, soaked at least 1 hour
- 8 basil leaves, shredded, for garnish

Preparation
Step 1
Combine oil and garlic. Wrap each bocconcini with a piece of prosciutto. Thread a wrapped bocconcini, a gread cube and a tomato onto each skewer. Brush bread cubes with garlic oil. Grill over medium-low flame, 2 to 3 minutes per side, until cheese begins to melt. Drizzle with olive oil and garnish with basil. Makes 6 servings.
