Ingredients
- 2 small flour torillas
- 3 T. chili olive oil
- 1/4 cup cheddar cheese
- 2 eggs cooked over easy, seasoned with salt and pepper
- 4 oz pork chorizo, cooked and crumbled
- 2 slices of Canadian bacon, grilled
- 1/2 avocado, sliced
- arugula for garnish

Step 1
Fry the tortilla in the chili olive oil on each side. Then add the cheese on top and let it melt (Eliminate the tortilla and cheese if you want to keep this Paleo).
Stack the egg on the tortilla, then add the Canadian bacon, chorizo, avocado, and arugula.
