  • 1 pound sliced boneless, skinless chicken breasts
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 4 tablespoons olive oil
  • 1 pound spicy Italian sausage
  • For Roux
  • 1 cup chopped onions
  • 1/2 stick butter
  • 2 teaspoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1/4 cup flour
  • 2 cups milk
  • 1 teaspoon cayenne pepper
  • 1 teaspoon mustard powder
  • 1 ounce Worcestershire sauce
  • 1 teaspoon seasoned salt
  • 1 cup grated mozzarella cheese
  • 1 cup cheddar cheese
  • 1/4 cup water
  • 2 tablespoons olive oil
  • 2 cups pre-cooked rice
  • 1/4 cup cheddar cheese
  • 1/4 cup bread crumbs

Season sliced chicken breasts with salt and pepper, and place chicken inside a hot sauté pan coated with olive oil over high heat.

Flip chicken pieces until halfway cooked, and then add Italian sausages. When chicken is cooked completely remove from pan and place on paper towel to absorb excess oil. When sausages are browned on both sides, place them on paper towel as well. When sausage cools, slice into ½ inch rounds and set aside.

In a skillet over high heat coated with olive oil add chopped onions and sauté for 1 – 2 minutes until slightly browned. Add butter, olive oil, salt and pepper. When butter melts add flour to the mixture and stir.

Add chicken and chopped sausages. Mix together then add milk, cayenne pepper, mustard powder, Worcestershire sauce, and seasoned salt and mix together. Add grated mozzarella and cheddar cheese. Let cheese melt, then reduce heat; add water to loosen mixture. Mix then set aside until casserole dish is prepared.

Coat a medium casserole dish with olive oil. Pour one cup of pre-cooked rice into bottom of dish, spread evenly then spoon in a cup of the roux mixture.

Alternate between the rice and the roux until desired amount of layers is achieved.

Sprinkle any remaining cheese on top, then top it off with breadcrumbs. Place in the oven at 350 degrees for 25 – 30 Minutes.
