Ingredients

  • 1 bag (5 oz) arugula
  • 1 1/2 cups julienned or shaved carrots
  • 1 cup thinly sliced fennel
  • 1 shallot, finely minced
  • 1/2 tsp fennel seed
  • 1 tbsp extra virgin olive oil
  • 1 tbsp fresh orange juice
  • 2 small naval oranges, sectioned

Preparation

Step 1

In a large bowl, combine arugula, carrots, fennel and shallot, toss gently to combine.

For the dressing, in a small bowl, combine fennel seed, oil and orange juice. Drizzle over arugula mixture; toss to coat.

Place salad on serving plates Top evenly with orange sections. Season with freshly ground pepper and serve.
