Ingredients

  • 2 tsp cooking oil
  • 1 lb. lean ground beef
  • 1/2 cup finely chopped onion
  • 2 tbsp taco seasoning mix, stir before measuring
  • 3/4 cup mayonnaise
  • 1/2 cup sour cream
  • 2 tbsp chopped fresh cilantro or parsley
  • 2 tbsp lime juice
  • 1 tbsp taco seasoning mix, stir before measuring
  • 1 cup mild salsa
  • 1 cup chopped yellow/green pepper
  • 1 cup chopped tomato
  • 1/2 cup grated medium cheddar cheese
  • 4 1/2 oz. can of sliced ripe olives, drained
  • 1/4 cup chopped green onion

Preparation

Step 1

Heat cooking oil in large frying pan on medium. Add ground beef and onion. Scramble-fry for about 10 minutes until beef is no longer pink. Drain. Cover to keep warm.

Add first amount of taco seasoning. Heat and stir for 1 minute. Transfer to medium bowl. Cover. Chill until cold.

Combine next 5 ingredients in separate medium bowl. Set aside.

Combine romaine and iceberg lettuce in large serving bowl. Scatter beef mixture over lettuce.

Layer next 3 ingredients, in order given, on top of beef mixture. Spread mayonnaise mixture on top of tomato to side of bowl to seal.

Sprinkle remaining 3 ingredients over top.
