Ingredients

  • 4 oz. bulk spinach (about 2 Cups)
  • 1/2 Cup fresh chopped cilantro
  • 1 garlic clove (or 1/4 tsp. PENZEYS MINCED GARLIC)
  • 1 fresh hot chili pepper, stem removed (Homegirl Café uses Serrano)
  • 3/4 Cup vegetable oil (Homegirl Café uses canola)
  • 21/2 Cups long grain white rice
  • 3 Cups water
  • 1 tsp. salt (Homegirl Café uses SEA SALT)
  • 3/4 Cup corn kernels
  • 1 Cup thinly cut spinach

Preparation

Step 1

In a blender, combine the spinach, cilantro, GARLIC and chili pepper. Blend until smooth. Set aside.

In a medium skillet over medium heat, heat the oil. Add the rice and cook, stirring constantly, until lightly golden, about 5 minutes. Add the vegetable mix, water, salt and corn and bring to a boil. Cook for 5 minutes. Lower the heat and simmer, covered, until the liquid is absorbed, about 15 minutes. Add the cut spinach before serving.
