Ingredients

  • Dressing:
  • 1 10-ounce package washed, ready-to-eat fresh spinach
  • 2-3 large ripe Bartlett or Bosc pears, cored and sliced
  • 1 avocado, peeled and diced
  • 3-4 bacon slices, cooked crisp and crumbled
  • 1/2 cup pine nuts or other nut, toasted
  • 1/2 cup dried cranberries
  • 1/4 cup sliced fresh mushrooms (optional)
  • 1/3 cup olive oil
  • 2 tablespoons seasoned rice vinegar
  • 1 garlic clove, crushed
  • 1/4 teaspoon salt
  • 1-2 teaspoons Dijon mustard

Preparation

Step 1

Combine spinach, pears, avocado, bacon, pine nuts, dried cranberries and mushrooms in a salad bowl.

To make the dressing, combine all ingredients in a small bowl and whisk until well blended.

Drizzle dressing over the salad and toss to coat. Makes 6 servings.
