Ingredients
- Chicken Salad:
- 1 head of romaine lettuce
- 2 cups shredded and cooked chicken (I boiled, shredded and seasoned with salt and pepper)
- 1/2 cup red pepper, diced
- 1/2 cup cucumber, peeled, seeded and diced
- 1/2 cup carrots, peeled and julienned
- 1/2 cup wonton strips
- 1/4 cup peanuts (optional)
- Sweet Peanut Dressing:
- 1/2 cup creamy peanut butter
- 2 TBS rice vinegar
- 2 TBS soy sauce
- 1 TBS lime juice
- 1 TBS yoshidas sauce (or other sweet teriyaki sauce)
- 1 dash red chili powder
- 1/4 cup water (add more if it gets too thick)

Step 1
Salad:
1. Chop your head of lettuce into bite sized pieces.
2. Put chicken, red pepper, cucumber, and carrots into a large mixing bowl with lettuce.
3. Mix everything together.
4. Serve salad topped with Peanut Butter Dressing, wontons and peanuts.
Dressing:
1. Combine all ingredients in a small sauce pan over medium heat.
2. Stir ingredients to combine as they heat.
3. Add more water if sauce is too thick.
Serve over salad.
