Ingredients

  • 2 cups golden raising
  • 3/4 cup cut mixed peel
  • 2 candied pineapple rings, diced
  • 1 cup slivered almonds
  • 1 cup candied cherries, halved
  • 3/4 cup all purpose flour
  • 1 1/2 cups butter/margarine softened
  • 1 1/2 cups granulated sugar
  • 6 eggs
  • 1/4 cup milk
  • 1 tsp vanilla
  • 1 tsp almond flavoring
  • 1/2 tsp lemon flavoring
  • 3 cups all purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt

Preparation

Step 1

Line 2 greased 6 1/2 inch and 1 greased 5 inch round fruit cake pans with brown sugar. Grease paper. Set aside.

Mix first 6 ingredients well to coat fruit with flour. Set aside.

Cream butter and sugar together well. Beat in eggs, 1 at a time. Mix in milk and flavorings.

Stir in flour, baking powder and salt. Add floured fruit. Mix. Spoon into prepared pans. Bake in 350 oven for 15 minutes. Turn oven to 300 for 1 hour, then turn oven to 275 until an inserted toothpick comes out clean. Total baking time is about 1 3/4 hours. Allow to ripen 3 to 4 weeks. Makes 2 medium cakes and 1 small cake.
