    can (16 oz.) kidney beans, rinsed and drained

    can (15 oz.) chickpeas, rinsed and drained

    can (14 1/2 oz.) diced tomatoes, undrained

    cups shredded cabbage

    Tbsp. dried basil

  • 1 1/2

    tsp.dried oregano

    tsp. pepper

    cup uncooked whole wheat elbow macaroni

Directions

1. In a large saucepan, saute the carrots, celery and onion in oil and butter until tender. Add garlic; cook 1 minute longer. 2. Stir in the broth, tomato sauce, beans, tomatoes, cabbage, basil, parsley, oregano and pepper. Bring to a boil. Reduce heat; cover and simmer 20 minutes. Meanwhile, cook pasta according to package directions; drain; drain. 3. Return soup to a boil. Stir in pasta; heat through. Ladle into bowls. Sprinkle with cheese.
