Ingredients

    c. all purpose flour

  • 1

    c. sugar

  • 3 1/2

    tsp. baking powder

  • 1

    tsp. salt

  • 3

    Tbsp. applesauce

  • 3/4

    c. milk

  • 1

    egg

  • 1/4

    c. wheat germ (optional)

  • 1

    c. finely chopped nuts (walnuts or pecans or a combination)

  • plus any combination of:

  • 2-3

    mashed ripe bananas

  • 1

    c. chopped dried apricots + 4 tsp. grated orange peel

  • 1

    c. cut-up dates

Directions

Heat oven to 350. Grease and flour 9x5x3 loaf pan or 2 8 1/2 x 4 1/2x2 1/2 inch loaf pans. Measure all ingredients into a large mixer bowl; beat on medium speed 1/2 minute, scraping side and bottom of bowl constantly. Pour into pan(s). Bake 65 minutes or until wooden pick inserted in center comes out clean. Remove from pan; cool thoroughly before slicing.
