Ingredients
- 2 roasted poblano chilies, peeled, seeded and finely diced
- 6 sprigs cilantro, finely chopped
- 1/2 cup finely diced cooked chorizo
- 1/2 cup finely diced plum tomatoes (canned or fresh)
- 1 cup shredded white cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1/2 cup grated mozzarella cheese
- 3 tablespoons grated Parmesan cheese Tortilla chips or cut-up raw vegetables for serving

Preparation
Step 1
1. Combine all ingredients in a large pan.
2. Heat over low flame or on a grill until cheese is melted and bubbly, stirring regularly.
3. Pour into chafing dish to keep warm. Serve immediately with the chips or vegetables.
