Evaporated Rice or Soy Milk
Evaporated Milk is just that - milk with some of the water removed. Just start with twice as much milk as you need.

- 2 cups Rice Milk or soy milk
- 1 tsp sugar
- Pinch salt
- 1/2 tsp vanilla

Step 1
1. Combine all ingredients except vanilla in medium-heavy saucepan; stir well to blend. Bring to a simmer over low heat; simmer, watching carefully, until mixture is reduced by half.
2. Remove from heat; stir in vanilla. Cover and chill. Store in refrigerator up to 4 days. You can freezse this for longer storage, but it may "break." Thaw in refrigerator; beat well, adding some rice milk or soy milk powder to make the mixture blend again.
