Ingredients

  • 1 large onion; chopped fine
  • 1 medium green pepper; chopped fine
  • 3-4 cloves of garlic; crushed or diced fine
  • 1 tsp oregano
  • 1/2 - 1 tsp of salt and pepper (to taste)
  • 1 -2 large cans of black beans
  • 2 cups water
  • 2 tbsp of red wine vinegar
  • Olive Oil; enough to coat bottom of pan
  • Optional topping: finely diced raw onion

Preparation

Step 1

1. Saute garlic, onions and green pepper over medium to low heat until soft.

2. Add the rest of ingredients except for the red wine vinegar, cover and simmer for 15 minutes.

3. If too soupy mash some of the beans and return to pot, if still soupy add another can of black beans after draining water; or if too thick add a little water to preferred consistency.

4. Serve alone or with white or yellow rice dishes including picadillo.

5. Can top with diced raw onion.
