Ingredients
- 1 cup butter, softened
- 1 1/2 cups sugar
- 1/4 cup brown sugar, packed
- 2 1/2 cups sweet potatoes, peeled, cooked and mashed
- 4 eggs
- 1 Tblsp vanilla extract
- 3 cups all-purpose flour
- 2 tsp baking powder
- 1 tsp baking soda
- 1 tsp salt
- 1 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp mace

Step 1
In a bowl, beat butter and sugars until fluffy.; Add sweet potatoes; beat thoroughly. Add eggs, one at a time, beating well after each addition; stir in vanilla. Whisk together remaining ingredients. Gradually add to butter mixture, beating at low speed until blended. Pour batter into a lightly greased and floured 10" tube pan. Bake at 350 degrees for one hour, or until cake tests done. Serves 10 to 12.
