- 1 tbsp. EVOO
- 1/2 medium red onion, chopped
- 2 tsp. ground cumin
- 1 large can black beans, rinsed and drained
- 1 1/2 cups chicken broth
- zest of one orange
- 1/2 cup fresh orange juice
- salt and pepper
- 1 tbsp. lime juice, plus grated zest
- 4 tbsp. greek yogurt
- 2 - 4 tablespoons cilantro

Preparation
Step 1
* Heat oil in a large saucepan over medium heat. Add onion, cover and cook, stirring occasionally, until browned, 4 to 5 minutes. Add cumin and cook, stirring, until fragrant, about 30 seconds. Add beans, water, orange zest and juice, salt and pepper; increase heat to medium-high and bring to a boil, stirring often. Cover and simmer for 10 - 15 minutes.
* Remove from heat and stir in lime juice and zest and yogurt. Puree with hand blender until smooth and strain, if desired.
* Serve hot or cold with yogurt mixed with a pinch of chili powder or cumin and some malden or smoked salt.
