Ingredients

  • CARAMEL:
  • 2 servings
  • 10 oz. fresh, cleaned shrimp
  • 4 green onions
  • 1/2 tbsp. peanut oil
  • 2 cloves garlic, finely minced
  • 1/2 tbsp. fish sauce
  • 1/2 tbsp. lime juice (plus grated zest)
  • 1/2 tbsp. brown sugar
  • 2 tbsp. water
  • 2 tbsp. sugar

Step 1

CARAMEL:

* Combine sugar and water in a small, heavy pot and stir over low heat, without boiling, until sugar is dissolved. Bring to a boil and boil until a thin, golden caramel forms. Remove from heat and set aside until ready to cook the shrimp. Just before cooking the shrimp, set the pan containing the caramel over the keep-warm burner and heat until liquid again.

SHRIMP:

* Finely chop half the green onions and add to the shrimp with the minced garlic.

* Cut the remaining green onions into 1 1/2" strips then finely shred and set aside.

* Heat the oil in a wok or heavy-based frying pan; add the shrimp with the garlic and green onion and cook over medium-high heat for about 3 minutes, tossing until the shrimp turn pink.

* Drizzle over the caramel sauce and fish sauce and cook for 1 minute. Add the lime juice, sugar and remaining green onion. Toss well and serve immediately.
