Roasted Red Pepper Wraps

The simplicity astounds! This is the perfect quick appetizer for parties. Ask my good friend, Pam Webb, who brings them to every party she attends.
Of course you can leave them whole as a meal or slice them for an appetizer.

Ingredients
- 2 flour tortillas, 10 inches in diameter or 2 whole-grain flat breads (such as lavash)
- 1 cup hummus, store-bought or homemade
- 1 cup shredded lettuce
- 2 roasted red peppers, sliced
- 2 carrots, peeled and grated
- 2 avocadoes, peeled and sliced
- 3/4 cup alfalfa sprouts
- Salt and freshly ground pepper, to taste

Preparation
Step 1
1. Place each tortilla or flat bread on a clean work surface.
2. Spread equal amounts of hummus in a horizontal line onto the tortilla/flat bread about an inch from the bottom. Arrange the lettuce, red peppers, grated carrots, avocado slices, and sprouts on top of the hummus.
3. Season with salt and pepper, and roll it up as if you were rolling sushi or a burrito, tucking in the sides as you go.
4. These can be cut in half and served as a sandwich, or you can roll it very tightly and then cut into thick slices to be served on a pretty platter. Cut diagonally for a pretty presentation.
