Ingredients
- 2 lbs. boneless, skinless chicken breasts, cubed
- 2 Granny Smith apples, peeled, cored and cubed
- 1/4 cup fresh cilantro
- 1/4 cup fresh mint leaves
- 1 cup plain yogurt
- 1/3 cup fresh ricotta cheese
- 4 fresh green chillies, seeded and chopped
- 2 bunches green onion, chopped
- 1 Tbsp. + 1 tsp. sugar
- 2 tsp. crushed garlic
- 2 tsp. grated fresh ginger
- 2 Tbsp. vegetable oil
- 2 tsp. mint sauce
- 1/2 cup sultanas

Step 1
Place the apple, 3 tablespoons of the coriander, the mint, the mint sauce, yogurt, ricotta, chillies, spring onions, sugar, garlic and ginger in a food processor and process for 1 minute.
Heat the oil in a wok, or dutch oven. Pour in the yogurt mixture and cook gently over a low heat for about 2 minutes.
Add the chicken and stir well. Cook over a medium-low heat for 12-15 minutes or until the chicken is fully cooked.
Garnish with the sultanas and the remaining cilantro.
