Ingredients
- 3 tablespoons balsamic vinegar
- 5 tablespoons olive oil
- 1 tablespoon water
- 1 teaspoon jarred minced garlic
- 2 tablespoons cilantro
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 2 cups whole-wheat rigatoni
- 2 yellow peppers
- 2 red peppers
- 2 zucchini
- 1 cup diced smoked Gouda cheese
- 2 tablespoons olive oil

Preparation
Step 1
In a jar combine 3 tablespoons balsamic vinegar,
5 tablespoons olive oil, 1 tablespoon water, 1 teaspoon jarred minced garlic, 2 tablespoons chopped cilantro, 1/2 teaspoon salt, and 1/4 teaspoon pepper.
Cook and drain 2 cups whole-wheat rigatoni.
Toss 4(2 yellow, 2 red) bell peppers, quartered, and 2 halved zucchini with 2 tablespoons olive oil and 1 teaspoon salt.
Grill, cool, and dice.
Toss with rigatoni, 1 cup diced smoked Gouda cheese and dressing.
