GG's Cookies- Pam Marchant Scafati

David, This recipe was given to me by Mike's Great-Grandmother who was 99 when she died in 2001. We call them "GG's Cookies" and they are a favorite in the Scafati family. They are absolutely easy to make, and they are light and delicious. Here you go:

Ingredients
- 1 cup sugar
- 1 cup butter
- 1 egg
- 1 cup sifted flour
- 1 teaspoon baking soda
- 2 cups quick oats
- 1 cup crushed corn flakes

Preparation
Step 1
Cream the sugar and butter; beat the egg in a separate bowl and add in to the sugar and butter.
Sift flour and baking soda and add into the first mixture.
Combine oats and corn flakes and add into the mix.
Form small balls and flatten onto a greased cookie sheet(or use parchment paper. Bake at 350 for ten minutes. They should be thin and crispy.(You can make them bigger, but we prefer them smaller so they crisp up more).
