Ingredients

  • 2 eggs, lightly beaten
  • 2 packages(3 ounce each) Ramen noodles
  • 1 package(16 ounce) frozen mixed vegetables
  • 1/3 cup peanut butter
  • 1/4 cup less-sodium soy sauce
  • 1/4 cup chopped lightly salted cocktail peanuts

Step 1

Bring pot of water to boil. Meanwhile, coat nonstick skillet with cooking spray; heat over medium-high. Add eggs; scramble until cooked through. Remove from skillet; reserve.
In boiling water, cook noodles(reserve flavor packet for another use) and vegetables until tender, 3 minutes; drain, reserving 1/2 cup cooking water. In same pot whisk peanut butter, soy sauce and reserved water. Heat over medium until just bubbly, 1 minute. Add noodles, vegetables and reserved egg; toss until coated. Heat through, about 1 minute. Transfer to serving dish. Sprinkle with peanuts.
