Ingredients

  • 3 eggs
  • 2 cups sugar
  • 1 cup vegetable oil
  • 1 Tablespoon vanilla
  • 2 cups loosely packed coarsely grated zucchini
  • 2 cups flour
  • 1 Tablespoon cinnamon
  • 2 teaspoons salt
  • 1/4 teaspoon baking powder
  • 1 cup chopped walnuts

Preparation

Step 1

In a large bowl, beat until frothy 3 eggs.
Beat in 2 cups sugar, 1 cup vegetable oil and 1 Tablespoon vanilla.
Beat all this until lemon colored and thick. Stir in 2 cups loosely packed coarsely grated zucchini.

Sift together 2 cups flour, 1 Tablespoon cinnamon, 2 teaspoons salt and 1/4 teaspoon baking powder.

Stir in after zucchini. Fold in 1 cup chopped walnuts. Bake in 2 loaves in pan that are greased and floured at 350F for one hour.
