. Dry rub ribs with rub and place in Zip loc or airtight container.
. Pre-cook ribs in aluminum roasting pan with 4 pints Guinness in bottom @ 350 degree oven for 1 hour.
. Smoke ribs @ 220 degrees over Apple & Mesquite wood chips for 2½ to 3½ hours. After 1½ hrs add barbeque sauce to ribs and place back to smoker for additional time.
. Grill over medium heat for 10-15 minutes to form crust.
. Let stand 5-10 minute in foil blanket before serving.
