Ingredients

  • 12 ounces large shrimp, peeled and de-veined
  • 1 tablespoon dry sherry
  • 1/8 teaspoon salt
  • 2 tablespoons peanut oil
  • 3/4 tablespoon fresh ginger, finely grated
  • 2 cloves garlic, minced
  • 2 tablespoons Thai Sweet Red Chili Sauce
  • 1/2 tablespoon jalepeno pepper or red Thai chili, seeded and finely chopped
  • 2 - 3 tbsp. water or broth, as needed
  • 1/2 teaspoon soy sauce
  • 2 scallions, thinly sliced
  • 2 tablespoons red bell pepper, finely chopped
  • 1/4 teaspoon dark sesame oil

Preparation

Step 1

*Place* the shrimp in bowl with the sherry and salt and marinate for 30 minutes, tossing every so often.

*Heat* wok until very hot. *While* pan is heating, pat shrimp dry. *Add* peanut oil to pan and heat until sizzling. *Add* the shrimp and stir-fry, stirring continuously, until just pink but not cooked through, about 1-2 minutes. *Add* the ginger, garlic, sweet red chili sauce and peppers; *stir-fry* about 1 minute more. Add the soy sauce, scallion greens and bell pepper and a bit of broth and stir until the shrimp are cooked through, about 1-2 minutes. *Do not* overcook. *Serve* with jasmine rice.
