Ingredients
- 1 onion, chopped
- 2 Tbsps butter
- 5 potatoes, peeled and cubed
- 1/2 tsp sage
- 1/2 tsp cumin
- 1 can evaporated milk
- 1/4 tsp nutmeg
- 1/2 tsp chili powder
- 1/4 tsp cayenne
- 2 cans cream of corn
- 2 Tbsp flour mixed with water
- 1-1/2 cups grated Cheddar cheese

Preparation
Step 1
Saute onion in butter.
Place potatoes in pan with water 2 inches above potatoes. Add sage and cumin. Boil approximately 15 minutes. Do NOT drain.
Add evaporated milk, nutmeg, chili powder, cayenne, corn. Bring to a boil
Add 1 Tbsp flour mixed with water. Boil.
Add cheese. Heat until cheese melts.
