Ingredients
- 3 Tbsp Olive or Vegetable Oil
- 3 med Zucchini Cut into 1/2 inch slices
- 2 lge Tomatoes peeled & Chopped
- 1 lge Onion chopped
- 1 Green Pepper cut into strips
- 1/4 cup minced fresh Parsley
- 1 tbsp fresh Basil or 1 tsp dry basil
- 1/2 tsp Salt
- 1/4 tsp Pepper
Preparation
Step 1
In lge Dutch oven or pot – heat oil over med. high.
Saute all ingredients for 5 mins. Cover and simmer 15 mins.
I like to cook longer until some of the water is cooked down.
Stir occasionally. 6–8 Servings
