Ingredients

  • 3 Tbsp Olive or Vegetable Oil
  • 3 med Zucchini Cut into 1/2 inch slices
  • 2 lge Tomatoes peeled & Chopped
  • 1 lge Onion chopped
  • 1 Green Pepper cut into strips
  • 1/4 cup minced fresh Parsley
  • 1 tbsp fresh Basil or 1 tsp dry basil
  • 1/2 tsp Salt
  • 1/4 tsp Pepper

Preparation

Step 1

In lge Dutch oven or pot – heat oil over med. high.
Saute all ingredients for 5 mins. Cover and simmer 15 mins.
I like to cook longer until some of the water is cooked down.
Stir occasionally. 6–8 Servings
