Ingredients
- 12-14 cups water
- 1 chicken (turkey) carcass
- 1 Onion, sliced
- 1 carrot, peeled and sliced
- 1 stalk celery, sliced
- 9-12 cubes of chicken boullion
- 1 cup brown rice

Preparation
Step 1
Put water and carcass in stockpot. Bring to a boil, then turn down heat and simmer about 2 hours. Remove bones to a colander.
Add the onion, carrot, celery and 9 boullion cubes to the soup. When the carcass has cooled, strip the remaining meat and add to pot. Make sure you share with the dog--this is their favorite part! Finally, add the rice. Cover, and cook til rice is done.
Taste, and if you need more chicken boullion, add another cube or two. GREAT with popovers!
