- 1 1/2 pounds thin green beans trimmed
- 1/3 cup olive oil
- 1 small onion, chopped
- 1 clove garlic, chopped
- 5 ripe tomatoes, peeled and seeded
- salt
- freshly ground pepper

Step 1
1. Cook green beans in boiling salted water for 5 minutes or just until tender. Drain, reserving half a cup of cooking water. Plunge into ice water to stop the cooking process.
2. Heat oil in a saucepan. Add onion and garlic;saute for 5 minutes. Add tomatoes and season to taste with salt and pepper. Cook 5 minutes.
3. Stir in 1/2 cup reserved water and green beans. Reduce heat to medium-low and cook, covered, for 15 minutes.
