Ingredients

  • Marinade
  • 1 cup canola oil
  • 1/2 cup apple cider vinegar
  • 1/4 cup brown sugar
  • 6 garlic cloves (minced)
  • 1 uncooked roasting chicken

Step 1

1. Whisk all of the marinade ingredients together and pour it over the chicken in a bowl or plastic container. Cover and chill overnight.

2. In the morning turn the chicken and marinate it for an addition 3 to 4 hours, or until you plan to cook it.

3. When you are ready to cook the chicken let it sit out for 20 minutes so that it can come a little closer to room temperature. Roast the chicken at 350 degrees for 45 minutes to 1 hour, or until a thermometer pressed into the thigh reads 160 degrees F. If you have a rotisserie, that is an even better way to prepare the clucker since this is how Boston Market cooks its chickens.
