I don't know of anyone that doesn't like my Parmesan chicken, especially my precious grandson Bryce.

Ingredients

  • 6 boneless, skinless thin sliced chicken breasts
  • 1 cup all purpose flour
  • l teaspoon kosher salt
  • 1/2 teaspoon fresh ground pepper
  • 2 extra large eggs scrambled
  • 1 1/4 cup seasoned dried bread crumbs
  • 1/2 cup Parmesan cheese, grated
  • unsalted butter
  • olive oil

Preparation

Step 1

Put flour and salt and pepper on a plate or pie plate or flat bowl.
Put scrambled eggs in another flat bowl
Put bread crumbs and mix with grated Parmesan cheese in another bowl or plate.

Place chicken in flour, then eggs, then bread crumb mixture. Saute in fry pan on medium high heat with about 2 tablespoons of olive oil to 1 tablespoon of butter. Saute until glolden brown.
