Asiago Cheese Breadsticks

Ingredients
- 2 tablespoons fresh chopped rosemary
- 1/3 cup shredded asiago cheese
- 14 oz. all purpose flour
- 1/4 oz. salt
- 1 1/4 oz. sugar
- 1 1/2 oz. dry yeast
- 7 oz. water (110-115 degrees)
- 1 oz. butter (2 tablespoons)

Preparation
Step 1
1. Mix together the water, yeast and sugar. Allow the yeast to sit for 5 minutes.
2. To the yeast mixture, add the flour, cheese, rosemary, salt and butter. In the bowl of an electric mixer fitted with a dough hook, mix the dough until it comes away from the sides of teh bowl and starts to climb the dough hook.
3. Allow the dough to rest in a warm area until it doubles in volume.
4. Preheat the oven to 350 degrees.
5. Turn the dough out onto a floured surface and roll the dough out to 1/8 inch thick.
6. Transfer the dough to the bottom side on a nonstick baking sheet. Use a pizza cutter to cut thin lines back and forth width-wise. Sprinkle with kosher salt.
7. Bake in preheated oven for 12-15 minutes or until light brown.
