Ingredients

  • Squash Soup
  • 1 c. carrots, diced
  • 1 c. celery, diced
  • 2 Tbs. ginger root, minced
  • 1 Tbs veg oil
  • 6 c. butternut squash, peeled & cut into large cubes
  • 6.5 c. water
  • 1 tsp salt
  • 1/2 tsp cinnamon
  • 1/8 tsp nutmeg
  • 2 Tbs soy sauce
  • 1 Tbs maple syrup
  • Pinch pepper
  • 2 Tbs chives or parsley

Preparation

Step 1

In soup pan, saute' carrots, celery & ginger in oil over medium heat 10 min. Add squash & cook 5 more min. Add water, salt, cinnamon, nutmeg & soy sauce. Bring to boil & simmer 10 min. or until squash is tender. Remove from heat & stir in syrup & pepper. Cool to room temperature, then put in blender & puree' until smooth.
