Ingredients

  • 7 to 8 medium-size potatoes (3 1/2 to 4 pounds), washed, peeled, and cut into thick slices or large cubes (Yukon Gold or any kind of potato)
  • 2 teaspoons salt
  • 1/2 cup evaporated milk or whole milk
  • 1/2 cup (1 stick) butter, cut into chunks
  • 1/2 teaspoon ground black pepper

Step 1

Place the potatoes in a medium-size stockpot, add water to cover by a depth of 1 inch, and add 1 tsp. of the salt. Place the pot over medium-high heat and bring it to a boil, then reduce the heat to medium and boil gently until the potatoes are extremely tender, about 30 minutes.

Drain the potatoes well and add the remaining ingredients, including the remaining teaspoon of salt, to the pot. Mix with an electric hand mixer on medium speed until smooth and creamy. Serve warm.
