This is my absolute favorite recipe that I worked for almost 2 years to perfect and I think I did a really good job.

Ingredients

  • Fresh bread crumbs:
  • 2 racks of lamb
  • vegetable oil
  • 2 lemons zested
  • 2 lemons juiced
  • 2 large bunches of Italian parsley
  • 5 to 6 whole garlic
  • 2 handfuls of whole walnuts
  • 1 stick of melted butter
  • 6 to 8 slices of Pepperidge Farm bread processed until bread crumbs

Preparation

Step 1

Preheat oven 400*

Place all the ingredients except the meat and bread crumbs in a food processor and process until well blended. Add bread crumbs and process

In a skillet put in a thin layer of vegetable oil and heat on medium heat. Salt and pepper the rack of lamb and pan sear until lightly golden on all sides. Remove from the pan and spread the crust mixture. Roast for about 30 to 40 minutes until inside temp is 125 to 130 and then let rest covered with foil for about 15 minutes.
