Ingredients

  • 1 cup white flour
  • 1 cup whole wheat flour
  • 1/4 cup packed brown sugar
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1 egg
  • 1 cup buttermilk
  • 1/4 cup oil
  • 1/4 tsp baking soda
  • your favorite jelly or jam

Preparation

Step 1

1. Measure and place in a large bowl both flours, sugar baking powder, baking soda, and salt. Mix together with a spoon.
2. In a small bowl, stir together egg, buttermilk, and oil. Add all at once ot the flour mixture until moistened. It will be lumpy.
3. Spray the muffin pan with cooking spray. Spoon 2 tbsp of the batter into each muffin cup. Place one tsp of jelly or jam into each muffin cup. Top with batter.
4. Bake muffins at 400 degrees F for 20 minutes. Cool on wire rack.
