Ingredients

  • 6 (7- or 8-inch) flour tortillas
  • 1 cup mozzarella cheese
  • 1/2 cup shredded Parmesan cheese
  • 1/4 cup chopped pitted ripe olives
  • 3 TBSP toasted, chopped walnuts
  • 1/2 tsp dried oregano

Preparation

Step 1

Coat one side of each tortilla with vegetable oil spray. Place tortillas, sprayed side down, on a cutting board or wax paper. Mix together cheeses.
In small bowl, combine olives, walnuts and oregano.
Sprinkle 1/4 cup cheese over half of each tortilla. Sprinkle one-sixth of the olive-walnut mixture over cheese. Fold tortilla in half, pressing gently.
Preheat oven to 300 degrees.
Heat a 10-inch skillet over medium heat 1 minute. Cook quesadillas, two at a time, 4 to 6 minutes or until light brown, turning once. Remove quesadillas from skillet and place on a baking sheet. Keep warm in preheated oven. Repeat with remaining quesadillas. To serve, cut each quesadillas into three wedges.
