Ingredients
- 2 large chicken breast halves
- extra virgin olive oil, for drizzling
- 2 teaspoons grill seasoning
- 1 pound pizza dough, store bought or homemade
- 2 tablespoons butter
- 1 tablespoon Worcestershire sauce
- 2 to 3 tablespoons wing sauce
- 1/2 cup tomato sauce
- 1 cup shredded Monterey Jack cheese
- 1/2 cup blue cheese crumbles
- 3 scallions, thinly sliced

This pizza….oh this pizza. We all know that I am drawn towards anything buffalo themed, anyway, so when I saw a buffalo chicken pizza, I was all over it. And all of you nay-sayers that say that Rachael Ray’s recipes can’t really be made in 30 minutes – give this one a try. I totally had this done in 30 minutes, except for the fact that I made my own pizza dough. That added on about 10 minutes, but you could totally use store bought dough, or dough that you made earlier and froze. But this one is totally perfect for a weeknight.
This was everything I expected it to be. A little bit spicy from the hot sauce, but a little bit cool from the blue cheese. I realize that a lot of people don’t like blue cheese, so if you are one of those, I would just add on some extra Mozzarella. It would still be good. My pizza dough was a bit too thick (since I let it sit out for about an hour before I actually made dinner, and it rose too much) but that is the only complaint I had from this pizza. Easy, fast, and packed with flavor – what else could you ask for??

Preheat the oven to 425F. Preheat a grill pan.
Cut the chicken breasts open like a book to create 4 thinner pieces of chicken. Drizzle with olive oil and sprinkle with the grill seasoning. When the grill is hot, add the chicken and cook until cooked through, about 3 minutes per side.
In a medium saucepan, melt the butter over medium heat. Add in the Worcestershire, hot sauce and tomato sauce.
When the chicken is done, remove to a cutting board and let rest for a few minutes. Thinly slice, then add to the hot sauce mixture and stir to coat the chicken. Cover the pizza dough with the chicken and sauce, then top with mozzarella, blue cheese and scallions.
Place the pizza in the preheated oven and cook until the dough has browned and the cheese is bubbly, about 18 minutes.

That’s it!! Simple, simple. Just make sure the recipe is a Rachael Ray recipe – it doesn’t matter if it comes from her talk show, 30-Minute Meals, her magazine, or one of her cookbooks. Buffalo chicken pizza is my all-time favorite pizza. I make a version of this at home, but her sauce recipe is a bit different and definitely worth a try. Looks delicious!

I really don’t ever eat chicken any more, but if there was ever a recipe to make me do it, it would definitely be a buffalo one. I love boneless buffalo anything, and especially a pizza!
I love buffalo flavored everything! I will be giving this pizza a try for sure! This will be perfect when we do make your own pizza. I can have this, 6 year old can have his plain cheese, and hubby can be his normal picky self as well!
I am loving buffalo chicken inspired dishes lately. And the 30 minute really makes this a perfect weeknight meal for me
