Preparation

Step 1

Fill a 5 litre soup pot with water and add the washed beans and the salt. Let them cook for 1/2 hour then add the carrots, tomato, leek, celery, and the pepper. When the beans are soft, in a small frying pan add the 2 tbsp oil and saute the minced garlic for 1 minute and then add the flour a little at a time, just enough to soak up the oil and to have it thicken but not to thick. When the. flour is lightly brown add about a cup of liquid from the soup, just enough so that the flour mixture is runny and then pour it into the. soup and stir. Bring soup to a boil ( do not cover soup because it likes to boil over, when it comes to a boil, cover only partially ). Let cook until beans are soft then add 2 hand fulls of broad noodles and. when the noodles are soft (about 7 minutes) remove, from heat. Add 3 tbsp of can milk to soup pot stir and serve.
* To give soup a nice flavor add 2-3 drops of vinegar to individual plate of soup, stir, and bon appetite.
