Ingredients

  • 1 can red kidney beans (rinsed & drained)
  • 1/2 small head romaine lettuce (chopped)
  • 1 tomato (diced)
  • 1 yellow pepper (diced)
  • 1/2 cucumber (seeded & diced)
  • 1/4 c mayonnaise dressing
  • 2 T milk
  • 1 T dill
  • 1/2 tsp. sugar
  • 3 T lemon juice
  • salt
  • 1/2 tsp. black pepper
  • 1/2 tsp. paprika
  • 4 chicken breasts
  • 1 T oil

Step 1

In medium bowl, mix kidney beans, lettuce, tomato, yellow pepper and cucumber. Set aside. In small bowl mix mayonnaise, ilk, dill, sugar, 1 T lemon juice and 1/2 tsp. salt. Set aside. In bag mix black pepper, paprika and 3/4 tsp. salt. Add chicken breast to bag and coat. In skillet heat oil and cook chicken breasts until no longer pink. Sprinkle with remaining 2 T lemon juice.

For salad, toss vegetable mixture with dressing mixture and serve with chicken breasts
