Ingredients

  • 4 (1/4 lb) chicken breast cutlets
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 Tbsp unsalted butter
  • 1/2 pound sliced white mushrooms
  • (Like shiitake or cremini's)
  • 2 garlic cloves, minced
  • 3/4 cup dry white wine
  • 1 Tbsp chopped fresh rosemary

Step 1

1. Sprinkle the chicken with 1/4 tsp of the salt and the pepper. Spray a large non-stick skillet and set over medium-high heat. Add the chicken and cook until browned and cooked through, about 3-5 minutes on each side. Transfer to platter; keep warm.

2. Melt the butter in the skillet. Add the mushrooms, garlic, and the remaining 1/4 tsp salt; cook stirring, until the mushrooms are browned, about 3 minutes. Add the wine and rosemary; cook until most of the liquid evaporates, about 3 minutes longer. Spoon the mushroom sauce over the chicken.

Serve with golden potatoes and veggie of choice.

Per serving - 1 chicken cutlet and 1/4 cup of mushroom sauce.

Could serve over whole - wheat capelleni (1 cup for each serving) This will add 3 to the points value.
