Grilled Herb Shrimp

Ingredients
- 3 cloves garlic, minced
- 1 medium yellow onion, diced
- 1/4 minced fresh parsley
- 1/4 minced fresh basil
- 1 tsp dry mustard
- 2 tsp Dijon mustard
- 2 tsp kosher salt
- 1/4 tsp freshly ground black pepper
- 1/4 cup olive oil
- Juice of 1 lemon
- 2 # jumbo shrimp (16-20 per #), peeled and deveined, with tails left on

Preparation
Step 1
Combine garlic, onion, parsley, basil, mustards, salt, pepper, olive oil and lemon juice in medium-size bowl. Add shrimp and allow to marinate for 1 hour at room temperature or up to 2 days covered in the refrigerator.
Prepare grill. Dip a paper towel in vegetable oil, and using tongs, brush over grilling rack to prevent shrimp from sticking. Place shrimp on skewers if desired and grill about 1 1/2 minutes per side. Do not overcook. Serve warm or chilled.
